Totally agree with you - having a pantry with plenty of "stuff" in it saves the day so many times! LOL! We do this a lot - sub an ingredient or 2 or 3...in case we don't have something and redo the recipe as needed. Saves gas, time, and makes for some creative meals.

Yugi, You can make Paella in an 10 inch omelette style frying pan (sloped sides) pan but I would STRONGLY urge you to buy a paella pan. It is the right shape, made of the the right material and has the dimpled bottom required to cook the paella rice properly. I have two paella pans. One is 13.5 inches in diameter. This is the one I use when I make paella for George and I. It is big enough to hold 4 - 6 servings of paella. My other paella pan is 17 inches and I use that when I am serving 8 to 10 people. If you have a selection of tapas before the paella you can actually get one or two more servings out of each pan size. I actually saw the 13.5 inch pan at the Crate and Barrel Outlet store (1864 N. Clybourn Avenue
Chicago, IL 60614) at Christmas but don't know if they still have them. If you can't find them there I would strongly urge you to get one from The Spanish Table web site. They have a store in Santa Fe and that is where I buuy all of the things I need for paella and tapas. Good Luck!

The patty melt was really good if I do say so myself. George loved it. The bread was really crispy, cheese melted perfectly and the caramelized onions were great. And yes, I am a believer now!
