This morning we prepared breakfast for a couple who had booked the Sandhill Crane Bed and Breakfast Romance Your Sweetheart package. The package includes flowers in the room, two wine glasses that I hand etch, and special romantic breakfast treats.
This morning we started with Broiled Apricots with Cranberry Orange Relish. I halve and pit the apricots. I fill each cavity with a small teaspoon full of raw sugar and place them in a baking dish. They go under the broiler until the sugar melts. After they come out from the broiler I let them rest for about 20 minutes. Just before service I top them with a homemade cranberry orange relish made with cranberries, grated orange peel, fresh orange juice and a bit of sugar. They make for a sunny start to the day.
This morning the entrée was stuffed croissants and hand cut hash browns. The croissants were filled with eggs scrambled with fresh chives, slices of roasted turkey and topped with baby swiss cheese. These go into the broiler to melt the cheese. The hash browns were sliced on a mandolin and fried in a saute pan with a little grape seed oil and Fox Point Seasoning. I would have included a picture of the croissants but as I was finishing the garnish one of the guests came into the kitchen to say that his partner did not eat eggs. So I dumped the prepared croissant and prepared another croissant with just turkey and cheese and put it under the broiler to melt the cheese. No time to take pictures and get food onto the table hot.
The final item on the Romance breakfast menu is a sweet treat. I hand dip strawberries in chocolate and present them on a plate lined with a heart-shaped doily. They are always the hit of the morning. I have small chinese take out style boxes available to pack up any strawberries that don’t get eaten at the table. Everyone seems to love the strawberries. They are a real unexpected surprise and a sweet end to a romantic interlude.
